Everyone loves dessert. We don’t always have time to make a dessert. Have you consider a fruit and Yogurt Parfait. It is only around 281 calories and a good way to get a source of your 5 a day.

½ cup of almonds (silvered preferred)
½ cup of sweetened coconut
3 medium peaches
4 cups of strawberries
2 cups of blueberries
1 cup of plain yogurts
1 cup of sour cream
4 tablespoons of honey
1 teaspoon of vanilla extract
In a small ungreased skillet, toast the almonds and coconut over medium heat until coconut is golden in color. This will take 5 to 7 minutes. Set aside to cool.
Thinly slice the peaches. Halve the strawberries and combine the fruit in a medium bowl.
In a small bowl stir together the yogurt, sour cream, honey and vanilla.
Layer the fruit and yogurt mixture in 8 parfait or tall glasses. Add one tablespoon of the coconut mixture to each glass when it is half filled. Top the parfait with the remaining of the coconut.
Use your imagination when chosing your fruits. Parfaits are good with any fruits.
